A very Long Shopping List today!

Grocery, Seafood Market, Meat/Butcher Market. As you know Wednesdays are my weekly shopping day. There were many BOGO’s this week as our large chain grocery stores are highly competitive and are conveniently across the street from each other! I even managed to squeeze in the 7 day a week Produce Market. Phew, I am tired. I am cooking and baking today. Some Quick Breads and of course supper in the oven on low.

Thinking ahead works well for me and a large family. Even if it is just you (or one other) planning can sometimes be a challenge. Do not become frustrated. There are so many items you can make on a budget. The previous 30 pages posted should give you some ideas.

Please remember to eat a good solid breakfast each day! It really helps, I am a firm believer in that. It got me through all my shopping today!!!HeHe I do enjoy it and look forward in it each Wednesday.

A Trip to buy in Bulk!

I took my monthly trip (to Sams’ Club) to stock up on paper towels, t-paper, laundry (I use Tide) soap, household cleaning supplies. For goodness sake $408.00 Later I had the Family Van loaded. Buying in bulk when you have a large family is the absolute best way to go. Equally important for 1-2 people you can economize on items frequently used by utilizing sales, BOGO’s, coupons etc. I happen to have a lot of space to store bulk items, some people do not have the space. If it is just you who needs so much space, it gets cluttered up? That’s why I always say buy only what you need. It will stretch that budget considerably.

I use to make homemade ravioli’s (time consuming), I have found a frozen product at Sam’s that I just love. They are in 2 pound frozen packages and they have meat, cheese, filled your choice at a very good cost. We love Skillet Baked Ravioli with loads of mozzarella cheese! I usually use my homemade tomato/marinara sauce from my garden tomatoes. I checked this past Wednesday at my local grocery store and they sell them in one pound packages, fairly reasonably priced. You can make several meals from one bag. Add however many you can eat at one sitting in a skillet, add tomato sauce (no need to heat sauce first), add mozzarella bake at 400 F for 15-20 minutes. Add a side of garlic or cheese toast and you have a great inexpensive meal! If you love pasta, or ravioli check into that at your grocery store. It would make a nice supper option.

Pumpkin cake roll dessert…

Oh my gosh this is the easiest recipe! The major grocery store yesterday (I always shop on Wednesdays) had Angel Food Cake on Sale in the Bakery – BOGO (Buy one get one free) so I grabbed two (it was a great special) $2.99 for 2 or $1.50 a piece (cheap!). I can’t make them that economical. I had a large can of Pumpkin pie filling (22 ounce) and I always buy 2-3 cool whip tubs each week. So, I cut the Angel Food Cake in half horizontally (yes, both of them-I have a big family to feed). In a mixing bowl I added the pumpkin pie pilling, tub of one cool whip, 1 1/2 teaspoon cinnamon, a few pinches of nutmeg, 2 tablespoons of cocoa powder stirred it up well. I used an offset spatula and loaded the filling into the center of each half. Angel food cake is very pliable. I laid it on top of clear plastic wrap (once filled). I then rolled it up with the help of the plastic wrap. Twisted the ends and placed on a plate in the Refrigerator to chill until supper. The second one I use Cherry Pie filling, tub of cool whip, dash of almond extract and stirred and filled the second one. Use the same procedure to roll it up and placed it in the refrigerator to chill.

The family had a hard time choosing which one but the pumpkin won out! So be it. I froze the Cherry Filing one for another time. If freezing double wrap and place in freezer safe zip-lock bags (I always use two freezer safe bags!).

Onward with some Pumpkin recipes!

Hoping you like pumpkins? I just made (last night) an easy frozen pie! You’ll need a 9″ graham cracker pie shell, one tub of cool whip, 1-16 ounce can pumpkin pie filling, 1/4 cups chopped pecans, 1-1/2 teaspoon of cinnamon, a few dashes of nutmeg.

In a large mixing bowl add pie filling, the entire container of cool whip, add cinnamon, nutmeg stir it well together. Transfer ingredients into the graham cracker pie shell, smooth out the top with an offset spatula, add chopped pecans to the top. Place in Freezer 2 hours.

Well let me say it was “smashing” Good!!! There is not a crumb left in sight. I made more pumpkin/cream cheese/dip for the gang. I am quite sure it will be gone before the evening is over!

Homemade quick pumpkin cream pie for under $4.00 bucks. That’s my kind of pie Y’All.

Pumpkin-Do you like it or not?

I have been creating some new recipes using can pumpkin pie filling, it is flavorful, economical I am all for that!.

An easy recipe the family loved is Pumpkin/Cream Cheese/Dip-Spread. So easy to prepare. They devoured it in less than 10 minutes??? What…That’s what I thought.

Purchase any cream cheese you like (A store brand is fine and more economical than Philadelphia Brand, unless you must have that particular brand). One 16 ounce block at room temperature works in this recipe. One can 16-20 ounce (any brand Pumpkin Pie Filling). You’ll need 1-1/4 teaspoon of cinnamon, a few dashes of nutmeg, 1 tablespoon of granulated sugar. Add all ingredients into a large mixing bowl, start mixing by hand using a wooden spoon, then switch to a hand mixer, blender, food processor, stand mixer (your choice). I use a food processor for mine. Let it whipped together for several minutes to well incorporate ingredients. Pack it in an airtight container and place in the refrigerator at least 30 minutes to chill. I made simple sweet rolls, a skillet of corn bread and brought out the Pumpkin dip/spread. They went um…this is great! And proceeded to eat every bit of it. They have asked me to make more, so tomorrow I will do that for them no problem.

Do you like Apples? It is the season for them!

Everywhere I look I see apples and I do love them! I have a simple dish that goes well with center cut pork chops baked. You’ll need one apple (Granny Smith and one white medium onion). You can use your Toaster oven or regular oven for this super easy meal. If using the toaster oven line the tray with aluminum foil and set temperature to 400 F (max). Use your favorite cooking spray on the foil. Season your center cut pork chop (s), 1-2 chops, depending on how many are eating, or if you want leftovers to freeze for another meal. Peel and core the apple, slice, then peel and slice the onion finely. Add all ingredients to a baking dish for regular oven or onto the toaster oven tray. Make sure you season with salt, black pepper, cinnamon, cumin those are the main ones. Pork is one meat that has to be fully cooked through! Add one or two center cut pork chops (seasoned well) to oven add sliced apples and onions and let them bake away. The combination of flavors are wonderful together. Have time while they bake to relax, shower, change clothes, read a book, have a cup of tea or coffee. If your center cut pork chops are thick hold off adding apples and onions until they bake 15 minutes by them self, then add apple and onion slices. If using the regular oven to bake use 1 cup low sodium vegetable stock to baking dish then add seasoned pork chop(s), bake 15-20 minutes then add apple slices and onions. This dish is a family favorite this time of year! It is economical for one or two people and is very easy and flavorful.
Allow enough bake time (40 minutes) to fully cook pork chops!!!
