As you might expect I am prepping and baking today all day! THE HOUSE SMELLS WONDERFUL!!!

Turkey! Turkey! Turkey!

I have ordered my Turkey(s) from the Market this morning. The price was great .58 cents a pound! Two-20 pounders. That should help me feed a small army?! HeHe. I ordered a spiral Baked Ham with pineapple brown sugar glaze. The menu is about complete.

If you are cooking for yourself (or a small group 2-4 people) you can find a small Turkey or purchase a Turkey breast from your local supermarket. When I was first married and a newlywed I made a Turkey Breast for our first Thanksgiving dinner together. It actually worked out well and we had leftovers for white meat turkey sandwiches. So there was very little waste and cooking time was short. Something for you to consider if you are cooking and doing so for a small group or just yourself. It is another option and you know I love choices and options!!! Naturally, I hope everyone has family and friends with them on Thanksgiving Day! Sometimes, that can not be and I get that. More on the Thanksgiving feast next week.

Some of my best recipes come from leftovers (Thanksgiving) you can do a lot of cooking and baking after the big day! I’ll share some of those with you in the weeks ahead.

Potatoes-Spuds-Taters…

Potatoes use to be so reasonably priced. Last week I looked at a 10 pound sack of russets for $7.99 say Whaaaaaaaaaaaaaaaaaaaaat!!! Forget about Yukon Golds, New red potatoes, so on. I talked with my produce Market owner and he is going to get me 25 pounds of Russets (I use these for baked potatoes, mashed potatoes, oven baked french fried wedges) any which way, our family loves potatoes. How about you? The cost under $11.00 bucko’s! I’ll have plenty for Thanksgiving as I make several potato dishes. The best part (aside from cost) will be freshness I’ll pick them up the day before Thanksgiving.

What are your plans for Thanksgiving? Not sure yet? I have been working on the list I am on desserts now. The usual Pumpkin pie, Old fashion Pecan pie, Sweet potato pie, Coconut cream layer cake, brownies. Like I mentioned the list keeps growing. I better stop! Ha!Ha!

Then there are the appetizers, snacks, dips that’s a long list too. I really have to limit myself to four appetizers. 2 types of dips, one cold and one served warm. I’ll make Lil’smokie (sausages) in the slow cooker using a orange marmalade sauce, mini meatballs in mushroom gravy.

Traditions!

Do you make, eat, enjoy Turkey on Thanksgiving? Most Americans do and will bake at least one Turkey. Some would prefer Baked Ham, Baked Whole Chicken. What’s served on your Thanksgiving Table? Ours of course is a table of traditions some old, some new. We’re weeks away from that wonderful day of feasting, visiting and thankfulness. Some foods can be made ahead of time but I personally try to limit that. I love the “fresh” out of the oven approach best.

Many people love to stuff the inside cavity of a Turkey or large Whole Chicken with a stuffing/dressing. There are so many ways to prepare that. I usually have 2-3 stuffing/dressing choices and I make them as side dishes. Because I feed over 30 people on Thanksgiving I love to see a full table of food. I have been writing my list out and it keeps growing, do you ever do that?

I also love the leftovers you can do some much with them. Hot Turkey sandwiches, cold turkey sandwiches. If you also make a Baked Ham (as I do) I make a great Ham loaf with some of the Ham leftovers. The options and ideas are endless. We will discuss more about this Holiday Feast in a week or two. For now if you are the lucky one to prepare the family meal get started on a list it’ll go easier for you.

Enough Already with Pumpkins, cinnamon, spices!

Are you feeling that way? Gosh, I have made pies, cupcakes, quick breads, muffins, dips, soups using pumpkin pie filling. I love it but it is time to move on to something else to share with YOU all.

I have been thinking about Holiday candy and confections not too mention foods. Turkey, Ham, etc. All the wonderful side dishes I love to prepare (and eat). Each year I make a different Stuffing/Dressing. Oh, I have to make the family’s favorite but I also make another side dish of Stuffing/Dressing.

Are you cooking for Thanksgiving or have you been invited out with family or friends? I am cooking huge again this year. One new side dish I will be making is Apples’n Onions stuffing. I make my own bread cubes and freeze them, which are seasoned and lightly toasted. I use two apples (any type really will work, peeled and diced, 2 white onions, peeled and diced, melted butter, apple juice, seasonings place in a 9 x 12 x 3 glass baking dish and baked for 35 minutes. It is sooooo good! I typically stuff the Turkey with a Mushroom & Sage Corn Bread stuffing the family loves. All the other trimmings I will write more about later. We each have our favorites. 

If you are going to be with family or friends this Thanksgiving I hope you bring a dish along to share. That’s a lot of fun. You could make a dessert, vegetable side dish many other options. We’ll get in to a discussion about that in a few weeks. The weather I understand for many has turned chilly or down right cold. So, I am imaging the outside pumpkins shriveling up? In Florida they would not last a day outside in the heat!!! They’re painted funny faces and kept inside on the large elongated kitchen counter. Honestly, I am about ready to get them out of my Kitchen!
