Since, I know your pantry/cabinets now have the necessary ingredients to throw together a meal quickly and efficiently?! I hope you feel ready to just dive in there! The refrigerator is stocked with most all the necessities as well. Bravo, you have made great strides to cooking on a budget without breaking the bank! Which leaves me to a big question – what are you hungry for this week? In previous posts, I mentioned my shopping day is on Wednesday’s. Mid week sales and fewer shoppers are a way for me to utilize sales, coupons, BOGO’s and get out of the store and back home quickly. No slow movers in the Florida Heat and Humidity-get those refrigerated, freezer, fresh foods home and put away. The stores being in very close proximity too me also is a great asset! Yes, the stores all have super air-conditioning and so does my vehicle and home. Fresh foods from the Seafood Market, Butcher/Meat Market would spoil in no time flat; so I carry a mid size cooler filled with ice! One must improvise at times. The vehicle is equipped to help me efficiently and quickly get my groceries home. That is not to say I have never been delayed and had Frozen Vanilla Yogurt melting-HeHe it has happened! Think about some grocery items you will want to pick up to prepare some favorite meals.

Shopping! Ready, set, let’s go!!!

Do you have your list prepared? Chosen your day to shop? Have any coupons to use? Have you found a cast iron skillet? Blender? Toaster oven? Very good let’s go shopping together. Grab a circular/flyer let’s see what is on sale. Hi-Light those items. We will be heading to produce first. I’d like you to get 3 fresh peaches (no bananas this week), head of Iceberg lettuce or lettuce of your choice. One red ripe tomato, bag of carrots (baby carrots are ok), one lemon, lime, orange. What do you need in the meat department. Let’s get one pound lean ground beef 90/10 fat to meat ratio. 2 skinless boneless chicken breasts. Dairy what cheese would you like? Grab 2-5 ounce plain yogurt. Get a pint of heavy cream. Do you still have butter? Small bag of shredded mozzarella cheese. In the frozen section of your grocery store get a 1/2 gallon frozen vanilla yogurt, we will be making smoothies this week. Bread choice? Grab a 4 count English muffin we will be making small pizza bites. You’ll need a small jar of tomato/marinara or pizza sauce which is cheaper? Grab a small jar. 24 pack of water (16.9 ounces) do you have flavored packets still? You’ll need a small container of Instant Oats this week we will be making overnight Oats for breakfast. Some ideas for Breakfast items!

As I mentioned in previous posts the importance of not skipping breakfast! I will make a few suggestions that may help you decide what you might be hungry for.

Overnight Oats are easy and nutritious.
Scrambled eggs (can be microwaved).
Cinnamon sugar toast.
Breakfast Frittata.
Breakfast Burrito.
Bacon and melted cheese on a muffin.
Bagel and cream cheese.
Coffee, Tea, Milk.
Orange juice, apple juice, tomato juice, grapefruit juice.
Fresh sliced fruit cup.
Sausage gravy and biscuit.
Poached egg(s) on English toasted muffin.

Let’s talk about Beef & Turkey Meats!

If you have not yet tried ground turkey you are certainly missing out! It’s lean, very little fats and super easy to cook with. Anything you would make with ground beef you can duplicate with ground turkey at a little less per pound costs and I do believe healthier! From your standard Chili, Burgers, Cheeseburgers, Taco’s, meatloaf. I even make turkey nuggets baked in the oven. They freeze really well too! That’s not to say you would not get hungry for a 1/4 pound or 1/2 pound ground beef burger because you probably will!!! This is another option for you to consider.

I can hardly notice a difference in chili, taco’s, meatloaf. I hope you will give it a try. It just may surprise you. You can opt to make meatballs and spaghetti as well with turkey ground meat. The options are really open to you!

My time just flies by!!!

Breakfast: Something we have not yet talked about is biscuits and gravy, are you a fan? It is a flavorful dish using a milk gravy base and breakfast sausage and warm biscuits. Your favorite juice. Coffee, Tea.

Lunch: Tortilla wrap sandwich with ham and cheese and veggies. Homemade chips, your water and flavored packet. A few cookies of your choice.

Supper/Dinner: Chicken breast baked in the toaster oven with whatever spices/seasonings you prefer. A fresh vegetable dish (broccoli, lima beans, corn). Making cupcakes is so very easy and you can use whatever homemade frosting/icing you like? They freeze (before icing) well. Using a 12 count muffin tin. You can use a box cake batter or prepare your own. I personally always use box it is quicker when feeding a large group. For you it would be just as economical to do the same and freeze them.

Often I recommend using a pre-mix corn bread (such as Jiffy corn bread mix) it is reasonably priced and very easy to make in the cast iron skillet. You can add anything to the batter sweet or savory? Your choice. These do have small cake mixes as well as (Martha White Brand) cake mixes or cupcakes. Easy, reasonably priced. Food for thought on your next shopping trip.

Leftovers (from suppers)

Sandwich Veggie Wraps
Rolled Flour tortillas stuffed with meat and cheese
Deli type Sub/Hoagie
Fruit with Yogurt

It is a good thing to eat lighter at lunch time (Whether working or at school) so that you do not feel sluggish and tired (if you had a big lunch). Another good reason to eat a solid breakfast!
