Making cupcakes is so very easy and you can use whatever homemade frosting/icing you like? They freeze (before icing) well. Using a 12 count muffin tin. You can use a box cake batter or prepare your own. I personally always use box it is quicker when feeding a large group. For you it would be just as economical to do the same and freeze them.
