Caramel Banana Frozen Bites

Economical, easy, flavorful frozen treats to make ahead, freeze and eat any time!

6 Bananas peeled cut into 2″ slices (set aside), 1-5 ounce jar Smuckers sundae caramel sauce, 8 ounces cool whipped topping add to a bowl and stir well, using a slotted spoon add several banana bites into the caramel/cool whip sauce to coat them well, allow to drip over bowl and place on a parchment lined baking sheet pan in a single layer. Repeat until all banana bites are coated.

Place in the freezer for one hour. Transfer to an airtight freezer safe container or freezer bags.

When you (or the children) need a sweet frozen treat, grab a few they are so delicious!

The Best Baked Garlic-Parsley French Fries!

If you are just serving yourself or one other person this recipe is easy, economical and super tasty! You’ll need 2 Russet potatoes rinse them well (you can peel if desired), cut into French Fries or wedges. Place in a bowl add Minced garlic (as much as you like), onion salt, black pepper to taste, mix well with clean hands to coat fries.

Transfer to a rimmed non stick baking sheet pan in a single layer, put oven temp at 400 F when oven is pre-heated and ready pop the pan in and bake 15-20 minutes, turning potatoes once. Garnish with fresh parsley.

Easy Carrot Fries

Did someone say eat your vegetables?! We love all kinds of veggies and this recipe is flavorful, easy and economical side dish. You’ll need 16 ounces of fresh carrots, peeled, rinsed and cut into (french fries/thin sticks) or if you prefer cut on the bias in larger 2′ length pieces. Seasoned them in a mixing bowl with olive oil, fresh chopped parsley, 2 tablespoons of pure honey, onion salt, black pepper (to taste), layer in a single non stick baking sheet pan and oven temp set to 400 F. Bake for 15 minutes then flip carrot fries and bake additional 10-15 minutes longer. They should be crisp outside, tender inside.

Pairs well with grilled meat, chicken, pork.

The Burrito Dog

I have been creating, tweaking and writing new recipes. I came up with this easy one for all the young and old children out there!!!

One package of All-Beef Hot Dogs (or your choice) -8 flour 6″ tortillas, mustard, cooked crispy (8 slices) bacon (cut into pieces), shredded cheddar cheese (Or your choice of cheese). Saute or grill hot dogs, spread mustard on the top surface of flour tortilla (or condiment(s) of your choice) add cooked hot dog in the middle of tortilla, add bacon pieces and cheese. Fold up bottom and top of filled tortilla and roll closed (seam side down). Add butter to the skillet or grill pan and cook filled Burrito Dogs a few minutes each side to brown them. Voila! Easy lunch especially for the children.

I usually make several dozen of these and freeze them, they’re easy to re-heat in the microwave a minute or two.

Baked S’Mores in Mini Servings!

Dessert for one or two people is easy, quick and fun to prepare. It is also economical and very tasty. Using two oven safe small ramekins or round/oval oven safe baking dishes, spray with Bakers Joy (Or you favorite cooking spray). You will need 4 whole Graham crackers crumbled, 1/2 cup semi sweet or milk chocolate mini chocolate chips ( or regular size, if that is what you have on hand), 8 marshmallows cut into halves.

Divide crumbled graham crackers into the bottom of dessert ramekins or oven safe small baking dishes, add chocolate morsels (do not melt first) add marshmallows on top. Place in a pre heated 350 degree oven and bake 6-8 minutes. When you see the marshmallows browning they are done. Carefully remove from oven.

Grab a spoon and dig in. Easy, no mess on your fingers, tastes just like a s’mores sandwich!!! We love them.

Do you like Apples?

So, I decided to purchase a bunch of apples and whip up some applesauce. Just peel and core the apples (The kitchen tool to core an apple is economical) cut into quarters, place in a large dutch oven pot with lid, add 1/2 cup brown sugar, 1-1/2 teaspoon cinnamon, 1/3 cup apple juice (or you can use water) and cook on medium heat 20 minutes. Transfer to a food processor and pulse several times to your desired consistency. Allow to cool and place in sterilized jars with lids (follow proper canning procedures). I use applesauce for a variety of recipes. I love warm fresh applesauce over vanilla bean ice cream. I use it to make a sauce for center cut pork chops, or pork tenderloin. Many options. It is really economical and easy to make homemade applesauce.

Depending on where you live in the US apples are everywhere, even in sunny Florida!

Do you enjoy sweet Smoothies?

Citrus fruits are so wonderful in smoothies!

A very easy one is Orange-Banana-Cream Smoothie. Great anytime of day or night!

You’ll need one ripe banana cut into pieces put into blender, add 1 cup Milk (whole or 1%-2% whatever you have on hand), 1 Valencia orange (washed) zest and juice, 1/2 cup cool whip or Reddi-whip topping. Run blender a few minutes to well incorporate all ingredients. Pour into a glass and enjoy!

I also love Coconut-Lime-Yogurt Smoothie you’ll need one lime (washed) zest and juice into a blender, 1-1/4 cup plain yogurt (or Greek Yogurt) 1/4 cup sweetened coconut flakes, pulse blender several times then run 2-3 minutes on high to incorporate ingredients. Pour in a glass and sip away!

A family favorite is Strawberry-Lemon Smoothie, 1-1/2 cups fresh strawberries (hulled and cut) you can use frozen if necessary, one lemon (washed) zest and juice into blender, 1 cup almond silk milk. Run blender 2 minutes and pour into glass and enjoy!
