Ground Turkey is reasonable priced and great in so many recipes. I recently made mini Turkey Meat Loaves that were both delicious and economical.
You’ll need 1 pound ground Turkey, one onion diced finely, 1-1/4 cup seasoned bread crumbs, 1 large egg (beaten), 1 teaspoon parsley, 1/3 teaspoon cumin, 1 teaspoon black pepper. With clean hands get in that meat and mix it up, form mini meatloaves and place them on a non stick baking dish. Bake @ 375 F for 40 minutes. You can add ketchup to the top sliced bacon,before baking them. It leaves a nice crusty topping. At least that is what I decided to do. The end result was actually very flavorful. I chose to make homemade mashed potatoes and side vegetable dish of green beans roasted in the oven with a bit of chili powder and sprinkle of parmesan cheese.
You can easily freeze these mini meat loaves once they have completely cooled from baking. Give them a try, I think you’ll be surprised at the flavor. There may or may not be a price per pound difference in your area, in Florida there is a significant difference (almost $1.00 per pound) less for lean ground turkey. Honestly, in many dishes you can not tell the difference (taste wise). There is definitely less fat in ground turkey than ground beef.
