You’ll need one pound (16 ounces) lean ground beef, one white onion sliced, 1/2 cup sliced button mushrooms, 8 slices crispy bacon cut into pieces, 1 tablespoon canola oil, 1 teaspoon black pepper, 1/2 teaspoon Kosher or Sea salt, 1 tablespoon cumin, 1/8 teaspoon nutmeg, 2 cups low sodium beef stock, 2 tablespoons all purpose flour, 1 cup light cream (or half and half), 2 tablespoons chopped parsley to garnish. Croutons to garnish, if desired.

In a large dutch oven pot with lid (or any soup pot with a lid) add oil, sliced onions, sliced mushrooms saute until softened, add lean ground beef, salt, pepper, cumin, nutmeg and cook on medium heat, break up meat as it cooks.
