Beef n’ Mushroom-Bacon Creamy Soup

This is a great soup on a cold day or night! You’ll need one pound (16 ounces) lean ground beef, one white onion sliced, 1/2 cup sliced button mushrooms, 8 slices crispy bacon cut into pieces, 1 tablespoon canola oil, 1 teaspoon black pepper, 1/2 teaspoon Kosher or Sea salt, 1 tablespoon cumin, 1/8 teaspoon nutmeg, 2 cups low sodium beef stock, 2 tablespoons all purpose flour, 1 cup light cream (or half and half), 2 tablespoons chopped parsley to garnish. Croutons to garnish, if desired.

In a large dutch oven pot with lid (or any soup pot with a lid) add oil, sliced onions, sliced mushrooms saute until softened, add lean ground beef, salt, pepper, cumin, nutmeg and cook on medium heat, break up meat as it cooks. Drain excess grease and return to stove top. Add beef stock, flour, light cream and stir well to incorporate ingredients. Cover with the lid and cook 15 minutes stirring occasionally. (Note: If you or your family do not care for mushrooms, just omit them from recipe!).

Serve in soup bowls, garnish with bacon pieces, grated cheese, parsley and croutons! Enjoy it is a family favorite. In closing I wish you Good Health. cheffie cooks easy 1-2-3.
