Cranberry-Orange Biscuits!

These are so easy to prepare and economical. You can use them for your Thanksgiving table as a option or in addition to dinner rolls. Purchase 1-2 cans (I use Pillsbury brand any will work) 8 Homestyle buttermilk biscuits.

In a bowl add one cup whole cranberries (I use Ocean Spray any will work-do not confuse can with cranberry jellied sauce), one orange zest and juice, 2 tablespoons of granulated sugar, 2 tablespoons melted butter and stir to combine. Place the 8 biscuits in a circular baking pan-pre greased/cooking spray (It is okay if they touch each other) add the cranberry/orange mixture on top, spread it out with an offset spatula then place in a 400 F hot oven in the middle rack for 10-12 minutes. Delicious, easy! I usually made 2 pans of these together with yeast dinner rolls for the Thanksgiving feast.

Stuffing-Dressing! Do you enjoy either with your Turkey?

I love both and make side dishes of each. I have many wonderful recipes for them. One of our favorite is Apple ‘n Onion corn bread stuffing. Mushroom and sage stuffing. Oyster stuffing. What’s your favorite? I usually stuffed both Turkeys with citrus fruit (oranges, lemons, limes cut in to quarters), lots of Butta, seasonings. It is so aromatic while baking, it really puts you in the spirit!

Our Thanksgiving table has many traditional fare as well. Creamy mashed potatoes-gravy, must have green bean casserole, cranberry sauce (several dishes made-cranberry-orange), rolls, biscuits, pies, cakes. It is really a feast.

I will also have a spiraled Baked Ham to serve. Sweet potatoes. Most of the dishes will work well with each other.

Cold-Easy Cranberry Salad for you Year Round!

Most everyone in my family loves cranberries. Several years ago I came up with this recipe. It is economical and great tasting! You’ll need:

2 – 15 ounce cans whole cranberries (not jellied), 1-5 ounce can mandarin oranges, 1-6 ounce can pineapple chunks, 1 cup pineapple juice, 1 cup Pure orange juice. In a bowl combine all ingredients and gently break up whole cranberries into the fruit mixture. Cover with plastic wrap and refrigerate at least 2 hours before serving. Add any nut pieces just before serving, I use pecan pieces in ours. Yumified!

Almond Hot Cocoa-anyone?

I love the flavors of cocoa and almond. Using regular milk, 1-1/2 cups in a saucepan on low heat, add 2 heaping tablespoons of sweetened cocoa powder stir well, add 1/8 teaspoon Pure Almond Extract, stir well and let it come up to temperature (steam rising). Pour yourself a big mug full and enjoy!

There are so many beverages to make on a budget, hot or cold. I love Iced Vanilla Coffee. Using leftover brewed morning coffee (cold), add some sugar, Pure Vanilla Extract stir well. Pour over ice cubes. Sip and enjoy.

Chorizo Bites served over Rice

In a large skillet add cut chorizo slices with 2 tablespoons of butter, cook several minutes, add  green onions, and saute several minutes.

Serve over brown or white rice. I use minute rice-cooking time is so quick and in less than 20 minutes supper is ready. Serve with a side green salad and some crusty bread.

Super delicious and very economical.

If you do not like chorizo you can substitute with sausage link, smoked or regular, or even kielbasa. Cut into bite sized slices.

Chocolate Ice Box Cake (no bake)

A very delicious easy to make refrigerated cake – no baking required!!! You’ll need 16 graham crackers chocolate, 1-tub cool whipped topping, 1/2 cup sweetened cocoa powder mix well together. Using a 8″ x 8″ baking dish (any square dish-pyrex will work here!) layer the bottom with 4 of the chocolate graham crackers then add the cocoa cool whipped topping spread it out with an offset spatula, add another layer of chocolate graham crackers and another layer of cocoa whipped topping and repeat 2 more times (4 layers deep).

Cover with plastic wrap and refrigerate overnight for best results. Just before serving add shavings from a solid piece of chocolate to the top layer, cut and serve. Enjoy!
