Let’s talk about some Beef Roasts!

Many major grocery stores often have BOGO’S on Beef (which is typically high!); when they go on sale buy as many roasts (different cuts of meat and freeze) as your budget will permit. I love Pot Roast with potatoes, carrots, in the slow cooker. Eye Round Roasts for Hot Beef open-faced sandwiches (very little fat). Sirloin Roast to grill. There are so many recipes and options to choose from.

From one Roast you can make several different meals including lunch time! A cold roast beef sandwich with cheese on multi-grain bread. Beef shredded for enchiladas with cheese and sauce.

I personally use A Butcher/Meat Market (weekly), but I have been known on Beef Sale Days (BOGO’s) to load up!

Some helpful TIPS!

When using nuts in meals you can almost always count on leftovers. Store them in an airtight container in your freezer. When ready to again use some take out what you need! They keep months in the freezer safe containers. I always use pecans, walnuts, pine nuts, peanuts, macadamia, shelled pistachios, cashews. It will aid in preserving the natural shelf life and oils in each of these nuts!

When using citrus fruits in sauces, smoothies, zests, keep the used citrus after squeezing juices, peel the inner membrane and flesh (with a lemon slice the end to sit flat), then fill with water place each ( lemon, lime, orange ) inside a baking muffin tin (wells), place into the freezer. Once frozen remove frozen fruit from tin wells into  freezer safe bag or airtight freezer safe container. They work great in beverages to keep them cold and add a citrusy flavor to a pitcher of cold water!

Creamed Shrimp Fettuccine

Do you love shrimp? This recipe is so delicious and quick to prepare. You’ll need 8 ounces of Fettuccine pasta, cooked per box instructions, one half pound (8 oz.) Fresh/Frozen Large Shrimp (deveined, shells off), 1/2 cup light cream, 1/2 cup fish stock ( or vegetable stock-low sodium), 1 tablespoon corn starch, 1 cup grated parmesan cheese.

In a saucepan add cream, stock, black pepper (to taste), corn starch, stir with a whisk, add Shrimp on low heat. Cook 4 minutes, add cooked (drained) pasta to mixture and stir.

Serve immediately. Add more grated parmesan, if desired. Will make 2 healthy servings. Garnish with fresh chopped parsley. Serve with side green salad or and cheesy bread sticks!

I love this Seafood pasta, give it a try-it may become your new favorite! Very tasty and fairly economical.

Apple and Carrot Smoothie

Nutritious and delicious morning smoothie.

You’ll just need 1 whole apple, peeled, cored, cut into chunks, one carrot peeled, rinsed, cut into pieces, 1 cup Greek or Plain Yogurt, add carrot pieces into the blender pulse and run one minute, add apple chunks run one minute, add yogurt to combine and run blender additional minute. I always add one tablespoon of honey before the final blending but that’s optional.

Pure into a chilled glass and enjoy!

Potato Cakes! Regular or Sweet?

Using some leftover mashed potatoes and you can create some delicious potato cakes. You just need 2 cups mashed potatoes, 1 cup bread crumbs, one beaten large egg, one stalk celery diced finely, one small onion diced finely, 1 teaspoon parsley, 1/2 teaspoon salt, pepper to taste.

Using a cast iron skillet add 2 tablespoons of melted butter. In a mixing bowl add all ingredients, stir to combine. Pat out 3-4″ diameter potato cakes and place in buttered skillet. Place skillet in a 400 F-pre heated oven and bake for 8-10 minutes or until golden in color.

You can add cheese if desired to the top of each potato cake. Delicious and easy and most important economical!

You can also make sweet potatoes cakes too!

Cinnamon Hot Cocoa

Delightful hot beverage that includes CHOCOLATE! Woo-Hoo. In a saucepan on medium heat add 1-1/2 cups whole Milk, 3 heaping tablespoons of cocoa powder (sweetened), one half teaspoon ground cinnamon. Mix ingredients in the warming milk, stirring to well combine. When hot transfer to a mug and add some whipped cream on top!


Sip and enjoy!

Do you have a Cast Iron Skillet? Toaster Oven?

Using a 10″-12″ Cast Iron Skillet for a great many recipes, you can purchase a new one or see if a family member has one you can use or have. Having a toaster oven is inexpensive and many things can be baked, toasted, broiled in them; a new one at Walmart is around $20.00. It will save you money on electric bill or gas depending on your particular stove/oven. Rather than heating up the oven to a 375 F or 400 F for one item when it can go into a toaster oven seems more logical, do you not agree? Your cast iron skillet will need to be used in a conventional type oven! In a cast iron skillet you can bake anything!!! They are my go to for so many recipes from corn breads (sweet and savory) to main dishes, desserts, and more. I have 1,500 original  recipes posted on Tasty Kitchen.com/ a Public-Community Recipe Sharing Site-Member. Although, I cook BIG meals for a large family (including friends) I do have recipes posted on Tasty Kitchen for one or two.
