Using some leftover mashed potatoes and you can create some delicious potato cakes. You just need 2 cups mashed potatoes, 1 cup bread crumbs, one beaten large egg, one stalk celery diced finely, one small onion diced finely, 1 teaspoon parsley, 1/2 teaspoon salt, pepper to taste.
Using a cast iron skillet add 2 tablespoons of melted butter. In a mixing bowl add all ingredients, stir to combine. Pat out 3-4″ diameter potato cakes and place in buttered skillet. Place skillet in a 400 F-pre heated oven and bake for 8-10 minutes or until golden in color.
You can add cheese if desired to the top of each potato cake. Delicious and easy and most important economical!
You can also make sweet potatoes cakes too!
