Do you love shrimp? This recipe is so delicious and quick to prepare. You’ll need 8 ounces of Fettuccine pasta, cooked per box instructions, one half pound (8 oz.) Fresh/Frozen Large Shrimp (deveined, shells off), 1/2 cup light cream, 1/2 cup fish stock ( or vegetable stock-low sodium), 1 tablespoon corn starch, 1 cup grated parmesan cheese.
In a saucepan add cream, stock, black pepper (to taste), corn starch, stir with a whisk, add Shrimp on low heat. Cook 4 minutes, add cooked (drained) pasta to mixture and stir.
Serve immediately. Add more grated parmesan, if desired. Will make 2 healthy servings. Garnish with fresh chopped parsley. Serve with side green salad or and cheesy bread sticks!
