You’ll need 1 bag 16 ounce mixed vegetables (we like corn, carrots, peas) you can use any type. 2 cups low sodium vegetable stock, 1/2 cup water, 1 cup light cream (or whole milk), salt and black pepper to taste, you can add one peeled, diced potato, fresh parsley as garnish. Allow to cook together for 15-20 minutes on medium heat stirring during cooking time. Great with crusty bread, crackers, croutons.
