Do you enjoy soup in the Winter months? How about an easy quick creamy corn chowder (above) garnish with cooked spinach leaf?! Soups freeze really well and are easy to re-heat!
If you like vegetables? A very economical soup is a Creamy Mixed Vegetable Soup (Meatless). You’ll need 1 bag 16 ounce mixed vegetables (we like corn, carrots, peas) you can use any type. 2 cups low sodium vegetable stock, 1/2 cup water, 1 cup light cream (or whole milk), salt and black pepper to taste, you can add one peeled, diced potato, fresh parsley as garnish. Allow to cook together for 15-20 minutes on medium heat stirring during cooking time. Great with crusty bread, crackers, croutons.
It is that time of year and prepare some quick, delicious soups for lunch and supper options. The list is endless! How about a Beef Tortilla Soup? Chicken Lemon Noodle Soup? Carrot and Apple Honey Soup? Chili, Vegetables Beef?!

They freeze wonderful for a quick lunch or light supper. I make soup year round here in Florida. In colder States it really will warm you up!!! Yay! Cheryl xo

Yes, I have a full size freezer and it is my extended pantry! Your soup recipes will come in handy. Freshly made soup in the freezee beats a “convenient” can of soup any day.

Oh my yes you control the sodium etc. On a rare occasion I might use cream of mushroom soup if running late and can not make it homemade otherwise I too try my best to make everything I can fresh. Freezers are the greatest thing to own I agree 100% with you on that!

I love all the suggestions you gave for using citrus zest on another post. I keep some in freezer bags too and love it. Your suggestions helped with ideas for using it daily. Sometimes I even put it in my water. I think I will like it in my plain yogurt. I will give that a try!

Yes true, we grow citrus on our land. Lemon, Lime, Coconuts and Bananas plus I have a large herb garden and getting ready to plant regular garden very soon! We love growing our own foods whenever possible. We are in our 10th year in gardening. Lots of fun!

That is awesome. We had citrus trees when we lived in the southwest and I miss them. But coconuts and bananas, that is really cool! We had a garden our first year here and then got caught up with indoor repairs etc. And me adjusting to the move… You are inspiring me to start again. We both love gardening so much and have the land, it is past due to start again!

Oh yes we started out small and it just grew in leaps and bounds! The Bananas and Coconuts were here on the land already. The lemon (trees), limes we planted and we get anywhere between 200-300 a year! I know all about repair and renovations we extended our home several times to accommodate our 5 children! LOL I have crawled through tile, hardwood flooring, wallboard, dust, more dust, etc.

Yes they help plant too! I have the local 4 H club come and they plant and I have them swim in our pool and serve them lunch (about 12 girls teenagers-fun!).
