I love mushrooms as most of my family does. These stuffed ones are a meal in themselves! I purchase several large Portobello’s remove gills, season with olive oil on the inside and make the stuffing. It is a Mediterranean based recipe using diced tomatoes, feta cheese, seasoned breadcrumbs, spices, and baked in the oven. Easy-right!
If making two you’ll need in a mixing bowl to add one large tomato diced small, 3/4 cup seasoned bread crumbs, one egg (beaten), 1 teaspoon oregano, 1 teaspoon onion salt, 1 teaspoon black pepper, 1/2 cup Feta cheese crumbles. Gently mix all ingredients together.
After I remove the stem and most of the gills from the Portobello’s I olive oil the inside with a brush place on a non stick baking sheet pan and put into a 425 F oven for 10-12 minutes. Then remove them from the oven-reduce oven temperature to 400 F, allow to cool slightly and add above mixture (fill them up!). Place back into the oven and bake 10 more minutes @ 400 F.
Done-sit back and enjoy them, they’re a favorite.
