These little tarts are so flavorful, economical and easy!!! Purchase the 6 pack mini graham cracker crumb tarts in mini aluminum tins, 2 cups mixed frozen berries, 4 ounce weight cool whipped topping, 2 bananas (divided use), one lemon for juice (divided use) you can zest the lemon first and freeze the zest for a later use.
In a food processor (or blender) add 1-1/2 bananas, pulse several times, add frozen berries and run to puree to a chunky state (it is ok to be a little bit lumpy for texture), add 1/2 lemon juice, fold in cool whip topping, fill each of the (6) pie tarts add sliced banana (squeeze lemon juice over sliced bananas to eliminate browning) to the top of each and refrigerate until ready to serve. I normally make these and serve them within one hour of preparation. Best served chilled.
