Lemon~Garlic Seasoned Buttered Popcorn-perfect for movie night! 1 cup whole corn kernels, 2 tablespoons canola oil, 1/4 stick melted butter, one tablespoon garlic salt, one teaspoon bottled sweetened lemon juice. Add Oil to a lidded pot once hot (on medium high heat) add popcorn kernels, popping will begin, as the popping slows down remove from heat source.

In a bowl add melted butter, lemon juice, garlic salt, and microwave 30 seconds, stir well, drizzle over popped corn.

Serve and enjoy!

Classic Chicken Parmigiana

It is an American~Italian Classic Dish loved by so many including myself and my family! I use boneless/skinless half Chicken Breasts (I do not bread and fry-because I do not like fried in oil foods)! Add the chicken breasts into a baking dish, add tomato or marinara (chunky) sauce-I use a homemade tomato sauce, add one teaspoon oregano, one teaspoon chopped fresh parsley, 1 cup grated parmesan, 1-1/4 cup Shredded mozzarella. Cover with aluminum foil and bake @ 375 F for 35 minutes, remove foil and continue baking 5-6 minutes longer.

I like to serve this with Garlic Bread and a garden fresh mixed green salad. Not only is it a delicious dish, it is economical to make.

Broccoli n’ Cheddar Gratin

This is one of my family’s favorite side dishes. One head broccoli cut crowns off, rinse, dry, place in a large mixing bowl, add one teaspoon garlic salt, one teaspoon onion powder, one teaspoon black pepper, gently mix. Pre Heat Oven 400 F, spray an oval/round baking dish with your favorite cooking spray. Add 3/4 cup shredded sharp cheddar cheese into the broccoli mixture, add 1/2 cup seasoned bread crumbs, stir again gently. Transfer into baking dish and bake 12 minutes.

The cheese will melt and be a golden brown. Serve and enjoy!

Kiwi~Yogurt Cream Smoothie

Delicious and easy any time Smoothie! 2 Kiwi fruits, peeled, cut in half, 1/4 cup Yogurt, 2 tablespoons whipped cream topping (like Cool Whip). In a blender add kiwi fruit and pulse several times, add yogurt, whipped cream and run blender one minute to well combine.

Transfer to a chilled glass, grab a straw, sip and enjoy the flavors!

BBQ Beef~Peppers~Cheese~ Party “Sub” Large Sandwich

This “Sub” Party Sandwich works so well at any get together or feeding a large family at lunch time on a weekend! 8 ounces Thick Sliced Deli Roast Beef, 1/4 cup BBQ Honey Sauce (Store bought is fine to use here), 1/2 green Bell Pepper sliced, 1/2 red bell pepper, sliced, 8 slices smoked mozzarella, 20 ounce Loaf Italian or French Bread Loaf.

Cut Bread Lengthwise and set aside. In a large saute pan add a bit of olive oil on medium heat, add sliced peppers and saute until tender, add BBQ honey sauce and stir gently to combine, add Deli Slice Thick Roast Beef and again stir gently, cook a few minutes, remove from heat source.

To Assemble Sub: On the bottom half of bread add Roast Beef/Peppers/Cheese/Sauce Mixture, topped with sliced smoked mozzarella cheese (cheese will melt from hot beef/peppers/mixture), add top of the bread, place on a serving platter. Cut into your desired sized pieces, serve and enjoy!

Mexican Black Beans & Corn

Fun side dish and super economical and easy. I like to serve mine over guacamole-that’s optional. One 15.5 ounce can Black beans, drained, rinsed, one 15 ounce can niblet corn, drained, one 1/2 diced white onion, 1/2 red bell pepper sliced finely, salt and pepper, to taste.

Optional Guacamole. You can slice an avocado on the side too. Saute black beans, onions, corn in canola oil ( 1 tablespoon ) on low heat for 8 minutes, add salt, pepper, and toss gently.

Easy-delicious side dish to any main course. Or a great lunch option.

Mexican Inspired Breakfast Tostadas

Quick, easy, economical breakfast or brunch any time!! You can use 6″ flour, wheat, corn tortillas. Add any cheese you like! 6 Large eggs, splash of cream, salt and black pepper whisk eggs well, add to a buttered skillet on medium heat and scramble the eggs. Dice a Roma tomato, dice up some wonderful green chiles, add your cheese, fill the tortilla and enjoy!!!
