Classic Chicken Parmigiana

It is an American~Italian Classic Dish loved by so many including myself and my family! I use boneless/skinless half Chicken Breasts (I do not bread and fry-because I do not like fried in oil foods)! Add the chicken breasts into a baking dish, add tomato or marinara (chunky) sauce-I use a homemade tomato sauce, add one teaspoon oregano, one teaspoon chopped fresh parsley, 1 cup grated parmesan, 1-1/4 cup Shredded mozzarella. Cover with aluminum foil and bake @ 375 F for 35 minutes, remove foil and continue baking 5-6 minutes longer.

I like to serve this with Garlic Bread and a garden fresh mixed green salad. Not only is it a delicious dish, it is economical to make.

  1. Have you ever baked them with panko?? I too don’t like fried food, but I love traditional pareseans….so I put them on a non back cookie sheet I spray with non stick spray, after I bath them lightly in watered down egg wash and then panko bread crumbs., sometimes I double dip and double bread them….I have also turned them over 1/2 way through the baking, its makes a nice crispy crust which I love on Chicken Parms…..just my way of getting around the fried part…..xxkat
