Nutritious and economical year round breakfast, brunch or on the go! Using 1/4 cup Instant Oats-microwave one minute with milk or fruit juice or water. Allow to cool down. Cut your fresh Fruit. We love Mango cubes, fresh pineapples, kiwi chunks, blueberries with a dash of brown sugar.

Stuffed Cheddar and Bacon Eggs

Great Appetizer or snack-economical too! Boil one dozen eggs for 10 minutes on high. Remove from heat add into cold water allow eggs to cool down. Peel them and set on a platter. Cut lengthwise, remove cooked yolks into a mixing bowl. Add 4 sliced cooked bacon cut into small bits, add 1-1/4 cups Shredded Sharp Cheddar Cheese, stir well. Add 1/2 teaspoon garlic salt, 1/2 teaspoon white pepper, be sure to stir well. Using a spoon fill the cavity of each half egg full of mixture and garnish with chopped fresh parsley. Yum! I like to refrigerate 0ne hour or so before serving.

Tuna & Bean Pitas

Great lunch option super affordable and flavorful. 2 pita pockets (wheat is fine and healthy), 1/2 cup rinsed white beans, cooked for 5 minutes in vegetable stock (low sodium), one 6 ounce can tuna of your choice, drained place in a bowl and keep in larger chunks, drain cooked beans and add to tuna (once cooled), add mayonnaise or sour cream or yogurt lightly on the inside of pita, add olive oil drizzle, chopped parsley to beans and tuna, toss gently and fill the pita cavity. I always cut the pita in half first, add the mayo-sour cream or yogurt then seasoned tuna and beans.

Its a fun lunch option on a budget! Enjoy.

Do you like Pancakes or Waffles?

I have an easy, flavorful recipe for bumping up the flavors. Very economical to make and easy! I just love specialty butters on pancakes.
I use Hungry Jack pancake mix (why?) it is easy, just add water to the batter and grill away! Flavored butter is as follows: 1 stick lightly salted butter, several tablespoons of any fruit or fruit preserves you like, yes even Nutella, add all ingredients into blender (or you can use a hand mixer) until creamy consistency. Transfer to an airtight container until ready to use. Add some into pancake/waffle batter and grill away. Use it on a cooked waffle!

Butter and warmed maple syrup is another easy, economical option.

This is so economical and easy to make and tastes wonderful on warm pancakes/waffles! Give it a try, that is if you like pancakes/waffles!

Lemon-Yogurt with Fresh Strawberries and Almonds

Great Mid day snack! Lemon Yogurt with Fresh Strawberries and Almonds. Yum! A favorite of mine. 1/4 Cup Plain Yogurt, one half fresh lemon juice only, 1/2 teaspoon sugar, 1/4 cup fresh strawberries sliced, 3 tablespoons Almonds. (I opted to add one teaspoon of Poppy Seeds, that’s optional).

Add Yogurt to a bowl, add lemon juice and sugar and stir well, add strawberries and almonds and devour!

Economical and delicious! Enjoy.

Strawberry Cream Smoothie!

Easy and flavorful smoothie. 1 cup sliced, hulled, fresh strawberries, 1/2 cup Milk, 2 tablespoons heavy cream, 1/4 teaspoon pure vanilla extract. Add strawberries into the blender and pulse several times, add all other ingredients and run blender one minute on high to well combine.

Pour into a glass, garnish with some fresh strawberries and enjoy!

Its a favorite of mine.

Roasted Red Peppers and Arugula Topped Pizza for Two

I always buy my pizza dough from a local Italian Restaurant and cut it and freeze. You can use any dough you prefer. One-5 ounce jar Roasted Red Peppers, 1/2 cup Tomato or Marinara Sauce, 3/4 cup fresh chopped Arugula, 1/2 cup parmesan grated cheese, 1/2 cup shredded mozzarella cheese.

Roll out dough (as thin as you like) on a flour dusted clean work surface, I always use a pizza stone and a 450 F hot oven. A rimmed large non stick baking sheet pan will work too add pizza dough. In a blender add Roasted Red Peppers and tomato/marinara sauce and run blender to puree about 1-2 minutes on high. Spoon sauce on pizza, add both cheeses to the top and place into the hot oven and bake for 12 minutes. Add Fresh chopped Arugula, slice and enjoy!

This is so economical to make and the flavors are great together.
