A very economical and hearty new soup recipe to share! 2 cups low sodium beef broth, 1/4 cup cold water, one clove garlic minced, one shallot grated, 1-1/2 cups cooked wild rice, one carrot diced, one stalk celery diced, one Idaho potato peeled, diced. I usually microwave potato pieces in water for 6-8 minutes until tender and to remove some starch, drain well. In a soup pot (lidded) add beef broth, garlic, shallot, on low heat simmer 5 minutes. Add carrot, celery, potatoes and cook 10 minutes on medium heat, reduce heat, stir well and add cooked rice. Simmer 10 minutes.
Serve in soup bowls with homemade croutons or crackers.
