Seasoned Potato & Egg Skillet Bake


Economical and easy breakfast or brunch for a crowd! I dice up 3 Yukon Gold Potatoes (use any that you have on hand), add 1 teaspoon smoked paprika, 1 teaspoon cumin, a few dashes of garlic salt, white pepper and add into an iron skillet (or any oven safe skillet), drizzle with good olive oil and bake @ 400 F for 15 minutes. Make a well using a spoon for each large egg, and pop back into the oven for 6 minutes. Optional to add grated cheese, if desired.

Serve with biscuits, muffins, toast and enjoy!
