Yogurt Covered Blueberries

Terrific*easy* new fruit snack for the summer months! 2 cups plain yogurt (or Greek yogurt), 24 ounces fresh blueberries rinsed well and dried on paper towels in a colander. Add yogurt to a bowl and using a slotted spoon dip several blueberries at a time into the yogurt, allow to drip and place coated blueberries on a parchment lined platter(s) or sheet pan(s). It will take a few minutes to do this but the reward afterwards makes in worthwhile!

Place the platter(s) or Sheet pan(s) in the freezer shelf for several hours to freeze. Once frozen place in freezer safe baggies or airtight container . Keep frozen and when ready grab a handful or bowlful and have at it! I am telling you they are scrumptious on a hot day! Cool and refreshing.

Pumpkin Spice Rice Krispy Treats

I made a huge batch of these fun, delicious treats! Using one box of Rice Krispy Cereal (11.5 ounces), 1-1/4 cup clear corn syrup, 1-1/4 tablespoons of (McCormick’s) Pumpkin Spice Mix, one tablespoon Honey, pinch of nutmeg.

Grease a 9″ x 12″ baking (clear-Pyrex) dish and set aside. In a large bowl add 1/2 of the rice Krispy Cereal, remaining ingredients (yes it’ll be sticky) use a sturdy spatula, mix, stir, fold, add remaining cereal mix to well combine, transfer to the prepared dish, smooth it out with an offset spatula, cover with plastic wrap and refrigerate until ready to cut into squares and serve.

Yum-its a favorite-easy treat!

Bananas-Caramel-Vanilla Ice Cream Dessert

Such an easy economical delicious dessert made in a snap! Using 4 ripe bananas slice them and add into a bowl with 1/2 lemon (juice only) and gently stir. Set aside. In a saucepan on low heat add 1/4 cup dark brown sugar, 2 tablespoons honey, 1/2 stick unsalted butter, stir until dissolved and combined, increase heat to medium stirring until thickened. Remove from heat-allow to cool. Add vanilla frozen yogurt or ice cream into a dish, ladle several spoons of bananas and caramel sauce, Dig in -it’s divine!!!

Chocolate Ice Box Cake (no bake)

A very delicious easy to make refrigerated cake – no baking required!!! You’ll need 16 graham crackers chocolate, 1-tub cool whipped topping, 1/2 cup sweetened cocoa powder mix well together. Using a 8″ x 8″ baking dish (any square dish-pyrex will work here!) layer the bottom with 4 of the chocolate graham crackers then add the cocoa cool whipped topping spread it out with an offset spatula, add another layer of chocolate graham crackers and another layer of cocoa whipped topping and repeat 2 more times (4 layers deep).

Cover with plastic wrap and refrigerate overnight for best results. Just before serving add shavings from a solid piece of chocolate to the top layer, cut and serve. Enjoy!

Chocolate Marshmallow Pops

If you are like me you prepare many desserts on a weekly basis. They are economical to make and a lot of fun. These chocolate marshmallow pops are so easy and the children love to help. You’ll need 1-bag whole large marshmallows, 20 sticks, 1-15 ounce bag chocolate morsels-melted, and any sugar sprinkles to coat for decorations.

Melt the chocolate morsels in a microwave safe bowl in 30 second intervals, stir until creamy and completely melted, pierce the bottom of the marshmallow with the stick and dip into the melted chocolate, lay on a piece of parchment or waxed paper to set-up, use any type of sprinkles to decorate. Easy, Easy, Easy…

Place on a platter and serve!
