Homemade Baked Mozzarella Sticks

16 ounces mozzarella cheese (I get mine from the Italian Market-a ball), cut into sticks and place into the freezer for 15 minutes to get them cold! I use Italian seasoned bread crumbs, garnish with fresh chopped basil. S & P, to taste.

Serve with warm ramekin of marinara sauce.

Coat the cheese sticks well in bread crumbs and place on a rimmed non stick baking sheet pan, place into a hot 450 F oven, bake until golden and cheese is melted. Serve with marinara sauce.

Delicious and economical to make.

Peach Smoothie

I used fresh Georgia Peaches (you can use frozen peaches), 4 peaches slice 1/2 for garnishing, peel and cut into pieces and place in your blender, pulse several times, add 1/4 teaspoon cinnamon, pinch of nutmeg, 1 cup Milk, handful of ice cubes, run blender to well combine.

Pour and enjoy!

Yum.

Wonderful Chicken Lettuce Wraps

SO light, flavorful and economical. I had a baked white meat chicken (Breast) leftover so I decided to shred it, dice a tomato, use some Boston Lettuce leaves, add lemon-pepper seasoning to the shredded chicken, finely grated cheese, and voila lunch!

Beefy Broth Wild Rice Soup

A very economical and hearty new soup recipe to share! 2 cups low sodium beef broth, 1/4 cup cold water, one clove garlic minced, one shallot grated, 1-1/2 cups cooked wild rice, one carrot diced, one stalk celery diced, one Idaho potato peeled, diced. I usually microwave potato pieces in water for 6-8 minutes until tender and to remove some starch, drain well. In a soup pot (lidded) add beef broth, garlic, shallot, on low heat simmer 5 minutes. Add carrot, celery, potatoes and cook 10 minutes on medium heat, reduce heat, stir well and add cooked rice. Simmer 10 minutes.

Serve in soup bowls with homemade croutons or crackers.

Chicken and Sesame Meatball Appetizers

These are so economical and easy to make. We love them. I served a big batch on Labor Day as one of the fun appetizers. I have my butcher shop ground fresh chicken for me (you can use lean turkey or even ground beef, if desired), 1/4 cup panko, one garlic clove minced, one beaten egg, dash of onion salt, dash of soy sauce, dash of Worcestershire sauce, mix well with clean hands and form bite size balls, place on a rimmed baking sheet pan and pop into a 425 F hot oven for 15 minutes. Remove from oven and sprinkle with sesame seeds.

That’s all there is to it-very simple and so delicious.

Avocado & Red Onion Dip

Delicious easy economical dip to put together in minutes. 2 ripe avocado (remove pits and flesh) 1/2 fresh lemon (juice only) 1/2 teaspoon garlic salt, dash of white pepper, 1/4 red onion diced or minced or grated finely. Mash all ingredients together, refrigerate 30 minutes. Serve. (we love tortilla chips with ours).

Serve with homemade tortilla chips, or any type of cracker/chips you love!

Bananas-Caramel-Vanilla Ice Cream Dessert

Such an easy economical delicious dessert made in a snap! Using 4 ripe bananas slice them and add into a bowl with 1/2 lemon (juice only)¬†and gently stir. Set aside. In a saucepan on low heat add 1/4 cup dark brown sugar, 2 tablespoons honey, 1/2 stick unsalted butter, stir until dissolved and combined, increase heat to medium stirring until thickened. Remove from heat-allow to cool. Add vanilla frozen yogurt or ice cream into a dish, ladle several spoons of bananas and caramel sauce, Dig in -it’s divine!!!
