Creamy Broccoli And Fettuccine Pasta

All that is left to do is add the sauce. Boil the Fettuccine noodles to al dente, remove pasta from water using a pasta utensil, I add the broccoli florets boil next for 4 minutes, drain well, mix the two in a large bowl.

In a sauce pan add 2 cups parmesan, 1/2 stick melted butter, s & p, to taste, 1 cup milk and stir until combined!

So delicious and easy!
Mix together and serve! Enjoy!

 

 

Yogurt Covered Blueberries

Terrific*easy* new fruit snack for the summer months! 2 cups plain yogurt (or Greek yogurt), 24 ounces fresh blueberries rinsed well and dried on paper towels in a colander. Add yogurt to a bowl and using a slotted spoon dip several blueberries at a time into the yogurt, allow to drip and place coated blueberries on a parchment lined platter(s) or sheet pan(s). It will take a few minutes to do this but the reward afterwards makes in worthwhile!

Place the platter(s) or Sheet pan(s) in the freezer shelf for several hours to freeze. Once frozen place in freezer safe baggies or airtight container . Keep frozen and when ready grab a handful or bowlful and have at it! I am telling you they are scrumptious on a hot day! Cool and refreshing.

Black Bean Burgers

These black bean burgers are so flavorful and easy to make. Using 2-14.5 ounce cans of black beans add to a skillet and heat through, mash them well. Add one beaten egg, 1/2 cup seasoned bread crumbs, dash of chili powder, dash of onion salt, black pepper dash of cumin and mix well.

Form 4 large patties and place on a non stick baking sheet pan, bake 4-5 minutes per side, flip and bake 4-5 minutes longer. Use your favorite rolls/buns and any condiments you love, cheese, lettuce, tomato, onion slices, etc.

Baked & Breaded Sausage & Rice Balls with Marinara Dipping Sauce

These gems are so easy and delicious to make. I use 8 ounces lean crumbled pork sausage, 1-1/2 cups cooked brown or white rice, seasoned bread crumbs. After thoroughly cooking/browning sausage crumble, drain excess grease and place into a large mixing bowl, add cooled cooked rice of  your choice, add one teaspoon garlic salt and a few dashes of black pepper, mix well. Using clean hands form balls and roll into breaded seasoned crumbs.

Place onto a rimmed baking sheet pan and put into a hot 400 F oven, bake until golden brown. Warm a side of marinara sauce and serve.

Yum!

Anytime Chicken Salad

Using leftover chicken is a great money saver in this delicious, easy salad for lunch or light supper. I love to add grapes, plenty of greens, and use a combo of light mayo and sour cream with a bit of tarragon and black pepper. I also make it early and chill in the refrigerator before serving.

Cheese & Red Pepper Quesadillas

Makes such a quick delicious lunch or light supper. I like to serve with a mild salsa sauce for dipping. 4 large flour tortillas, butter, 1/2 red bell pepper sliced, 1-1/4 cups your favorite cheese (I use a white sharp cheddar).

Using a grill pan add butter until melted, lay two flour tortillas flat, add cheese and red pepper slices and top with another flour tortilla, grill until golden in color and cheese begins to melt, carefully flip over and brown opposite side. Cut into triangles, plate and serve.

Enjoy, they are a favorite, economical meal.
